About Daniel

Helping cooking and baking students find success with in the kitchen so they can be proud to say, "See, I made that!"

Sessions are recorded for easy referral.

Recipes are both digital and paper.

I've been in the food service industry for over 20 year as a cook, a head baker, and a head chef. I've taught culinary school and worked with dozens of cooks and bakers to help them grow their skills.

I have an Oregon Food Handlers card and know about good sanitation practices.

When the student, or my kids, have that light bulb moment, when it all clicks just so and the light of understanding turns on, that's the reason I teach. Everyone can cook and everyone can bake. I want to show that person who is certain that kitchen success is possible and that it can be done.

I started teaching at a small community college, now a university, it Tallahassee, FL. I taught nearly every course offered during my tenure.

The school was new and I was excited to help the school grow, to share what I had learned and see the students develop.

I've been in the food service industry for over 20 years teaching cooks and bakers the basics to the refined skills of the trade.

As a culinary teacher I had continuing education in teaching methods.

I've written an e-cookbook about muffins and have a few more in the works.

About the lesson

Learn what the student wants to learn then determine what knowledge level exists at that level. Once I know what has been tried, if anything, then I can determine how to start building success.

All these students sought professional kitchen jobs, but they ranged in life experience from just out of high school to retiring and looking for the next new thing.

On line, I have worked with chefs who want to learn to bake, home bakers who want to get better at that and cooks looking to improve their skills.

From the blog posts on cooking and baking, I've interacted with a variety of people with simple questions to the more complex about mixing or what kinds of flours work in various situations.

Hire a person you connect with. If the teacher has a style of humor or demeanor which you get, that's the teacher for you. Conversely, if that teacher, perhaps very well informed, struggles to meet you at the intellectual crossroads, then it's not going to go well.

A friend in one of my Facebook groups was struggling with no knead bread. We worked together, on-line, to get him where he wanted to be. He made such good strides that his wife bought him the gift of two bannetons, wooden proofing baskets, for bread.

A few things worth thinking about before reaching out
Are you a show me only teacher, that is, do I get to do it too?

I find I am very hard on myself when I fail. How can you help me overcome failing and being hard on myself?

Why are the basics so important? I want to make croissant and puff pastry and Beef Wellington first thing.

Can you go slow enough for me to get it when there are lots of things happening at once?
